Brian, when it gets butchered, make sure somebody rubs the little porker in salt, or we'll put him in a brine solution on Friday. Vondy do you know of a rental place in Hot Springs?  I'm gonna forget about the deep fat frying method . It won't have the rotessior but I'll just have to manage on the turning of the porker. Oh and we may be coming Thurs afternoon instead of Friday, so Brian, we could possibly cook the porker Friday night before bed. We could all join together and have a group pic done if it isn't dark by then. Like to get another group pic on Saturday when we all on the boats.

Sounds good. If I get the litter mates to mine I will be doing the butchering but there is a slaughter house here that will probably do it for me or have one of theirs to butcher. I will check on that this week. I will be out of town and probably away from email the 25th thru Aug 1st so need to firm up plans on what I need to do next week otherwise will be when I return. I found out the job bids Friday am at 11 so I won't get to leave until 11 Friday. Probably wont be up there till 5 or so. I may can work something out with you Charles if you want to PM me to get the pig.

Wife got an answer back from some place and they put us on to somebody in Hot Springs, AR with a towable smoker, will contact them Monday to see what kind of arrangments we can make on it.

Left a message for Chef Lee to see about renting his traveling smoker for Friday evening Aug 7th, figure I could cook all night. Once its cooked, do we have a plan on where we could store it until time to reheat and serve? Ideas anyone? Unless I can make arrangements to keep the smoker until Sat afternoon.

Ok, I got a hold of Chef Lee and he'll cook it for us Friday evening and store it until we pick it up Saturday for our lunch (and probably supper too) . He'll charge us a $100 (normally charges $250). So Friday I'll be accepting donations as I'll pay him up front. Brian, I've got the address of the restaurant he wants the pig delivered to. Its 1606 E. Page in Malvern, AR  address is hot linked on mapquest. So coming from Little Rock (if you're coming that way), instead of going North on Hwy 270 to Hot Springs, go South to Malvern. From Hot Springs, he's 23 miles away (best I could do). I've got his cell phone and restaurant phone numbers (coming in a email to you). I'm to call him a couple of days prior to Friday to set it up. Tell you guys what, if I take care of the pig cooking, we can figure out what sides we want to have with it as we'll need bread, bbq sauce (or whatever), potatoe salad, beans, etc or whatever you guys want. I still haven't got any confirmations to the last email I sent out on who's coming so we could get a head count.  Oh and I confirmed with the hotel I will be there Thursday afternoon. That'll allow me to do some scouting before eveyone else gets there.

Going to call the Clarion tomorrow and see what they'll charge me for a room on Saturday so we can all eat indoors and get together and socialize. Do I need to check on food warmers? anything else?  Or we can get those canned heat things, and we can always get plastic dishes and stuff. Does that sound like a plan?  Is anybody going to bring any kind of a seafood (cajun preferably) dish?

Ok, here's what I've got. I've called the Clarion and couldn't get a meeting room, its all booked up so I've made arrangements at the dining room to reserve an area for 20 people. Since I've only had one person confirm they are coming and knowing Vondy and briankinley2004 will be there, nobody else has ever replied to say who or how many are coming. I know several expressed interest like bboater and some others but no confirmations except for 3 people (well 4 including myself) and their wives. Brian, is one or both your boys coming? Anybody else, please speak up - we can't hear you    Mary who's in charge of the dining room area will call me tonight 6-7pm my time to confirm.  I've told them I'd like this area for over an hour. I'll also talk to her to see about a food cart or something for the piggie to rest on (something like a buffet line maybe?)

Both my boys will probably come. Either way put me down for 4. I got the pig ordered today. The local place skins them so couldn't process mine but he is getting a 60# pig from another place which he said would dress around 30-35# and feed 15-20 people well. It will have skin on. Did you get my PM last night about my wife being able to help with warmers, etc.?

Well, I'm back to square 1 on where we can all gather to eat this porker and sides at. Vondy you got any suggestions as I can't visualize the area and don't know where anything is. Is there anything at all land based where those handicapped don't have to be hoisted on/off the toons and preferably very close to Clarion Resort? Or, what other floating docks/launch areas are there that would be convenient so I can access my vehicle at the due time to go get the porker? We could have one big tailgate party of sorts (I sure hope its not in the high 90's in the shade if we can find shade)

Ok, now we're cooking. I ended up calling Holiday Inn Express which is the closest place to Clarion Resort (1 mile). I got the Breakfast Room which can accomadate 55 people for $50 for the 1st 2 hrs. We can't get into it until 12 noon Saturday. So since it'll take almost an hour to go to and bring back the porker from Malvern, AR we could start lunch at 12:30 pm, which gives us an hour and 30min, and half hour prior to get everything setup however we're going to set it up (which I'll call Brian's wife on). If we want it for longer, its $25hr after the 1st 2 hours (so means we'll need to clean up at least 15min prior to 2pm).

Does that sound good to everyone? Suggestions are truly welcomed

Ok, done with Brian's wife (thank your wife for me Brian ) she's fixing potatoe salad and will supply warmers for hot food and she mentioned they'll fix 2 big cans of beans.  So here's what else we'll need.

Heavy Duty plastic tableware (you know, those clear knifes, spons and forks), my wife will bring serving spons, forks and a couple knifes.

Bread (hamburger buns if you want pulled pork) and sliced bread

BBQ Sauce (or any other sauce of your choice)

Tea (Brian's wife suggested a local walgreens or something - Red Diamond) Sweet & UnSweet, those that want anything else, BYOD (bring your own drink - like me - diet pepsi)

ICE

Big red type cups (stout and holds plenty)

Any little dish you'd like to bring     - Ok so that's a start

Thought I'd share this Google Earth image I did of the area around the hotel. A marks where the hotel is located. To the southwest, you'll see the marina. I actually did do a close up of the hotel area and saw that they have several slips there, just don't know how big they actually are but I scoped out the whole lake looking for points to fish from and you can see to the southeast a little island that slopes off to the east from that little island and my bet there'll be some fish to the southeast of that slope, also around the west side of the overpass by the hotel, between the hotel and marina looks like more good spots

Ok so 6 in your group (and now I know who's email address that was that was the ONLY one that confirmed they were coming)    4 in briankinley2004's group, me and the wife so that's 12 so far. Email sent to others who expressed interest (Woody's already said he couldn't attend) was Killin time ff, BreamSlayer71 (who's indicated they'll camp on the boat), vondy (who lives there) but don't know yet how many are in their party, Empty Pockets, and I know we just had a new member who posted recently in the past week (can't remember who that was - does anyone know?) I'll have to review the past week posts and I'll send them an email too. BreamSlayer71, I know we can make arrangements for shower for your group with one of us who's renting a room. But you'll need to bring your own towels

Well don't know, as the breakfast room is a mile north of the Clarion Resort. I'll have to leave at least a half hour early to pick up and pay for the porker, everyone else can meet up at the Holiday Inn Express at noon sharp and begin setting up, however Mrs. briankinley2004 wants it setup, she'll have warmers and whatnot. I figure the feast will probably begin around 12:30, it'll take me at least half hour there and a half hour back (assuming no problems). We've got the room from noon until 2pm, I'll pay for it on Thursday when I get in.  I'm hoping we can get everyone to say meet up at the Clarion Resort Friday afternoon. I'm thinking a group photo of boats on trailers with everyone in front (or something). I've requested a PontoonStuff banner from PS (which was granted so its arriving this week I think). We'll for sure get photo's during the porker luncheon (so should I dare say the PIGOUT)   Many thanks to briankinley2004 for the PORKER we are all soon to be feasting on. I truly hope I hear from the others who mentioned they were coming, that would put us at about 30 people or so.

Just remember to be respectful when you eat that porker -- razorback hogs are highly regarded around those parts, approaching the level of religion with some folks!  That being said, I'm sure it will be delicious and I wish that I were joining you.  I was born and raised not too far from there.

Ahh but this is a little cajun porker, who's had its share of a few crawdad's, which will make it much more delicious , yep, so keep us in mind for the Carlyle, IL one next year, or the one in Houma, LA end of next April/1st of May.
